Jumbo Banana Bread Recipe

I’m a hugeeee fan of banana bread like huge. I get excited when the bananas in the house start becoming ripe cause I know I’m about to bake some bread and rip into it. 

I remember during quarantine when everyone was baking it and that phase died down eventually but not for me. Oh no, this was never a phase but a lifestyle. And it’s to a point where I wouldn’t make just normal sizes anymore cause they would finish quickly so I’d make a giant one that would last days so everyone could have some.

Without wasting any more time, here’s my giant banana bread recipe.

Ingredients:

-2 cups all-purpose flour

-2 teaspoons of baking powder

-1 teaspoon of salt

-8 ripe bananas, mashed

-4 large eggs

-1.5 cups of white sugar

-1 tablespoon of vanilla 

Steps:

-Preheat the oven to 175 degrees Celsius and grease the biggest baking tray you have. I usually like mine with baking paper so it doesn’t stick but this time decided to add some butter all around it and dredge a bit of flour everywhere to prevent sticking.

-In one bowl, sieve the flour, baking powder, and salt then aside.

-Mash all 8 bananas until they form a mush and can be used in the bread and put in a separate bowl.

-Proceed to add the eggs, vanilla and sugar in then give a good mix til everything it combined.

-After that, put the dry mix into the banana mixture and mix once more. This part was hard for me ngl cause it’s a lot to mix given that the batter was heavy and a lot.

-Once combined, pour into the baking pan and put into the preheated oven until fully baked. This usually takes about 50 to 60 minutes but I don’t usually time it, I just wait til it’s ready and poke it with a fork to check.

-As soon as it’s done, it can be removed from the oven to cool down and can then be served.
